It all started when…
The farmer, my father, Adam Parke, started boiling Maple Syrup in second grade from 60 trees on his parents' farm, staying up all night and falling asleep in school. Almost every season since Adam has been making Maple Syrup.
In 1986 the first trees were tapped and syrup made on Windswept Farm. Adam purchased the farm in 1979 from an old French Canadian family.

New West KnifeWorks makes knives like we cook. We use the best ingredients and prepare them with the patient hands of an artist. Our aim is to bring more joy to everyday chores by making tools that are as beautiful as they are useful.
OUR FOUNDER
Corey Milligan moved to Jackson Hole to pursue the good life. To earn a living while enjoying the outdoors, he worked as a line cook in local restaurants. His initial interest in cutlery came from the desire to make a knife that would better express his love of cooking.
There’s a mountain town unlike anything else. Gritty. Raw. Unbroken. 42 miles of true west. It’s hidden in a valley, under the shadow of the Tetons, behind the steaming geysers of Yellowstone.
It’s filled with wildlife, wild folks and even a guy called Wild Bill. It’s a place where you can go days without seeing another soul. But you can’t go a day without running into an elk.
It is of the land, by the land and for the land. This place is Jackson Hole, and the locals have been keeping the spirit alive and untamed since 1914.
This is an invitation. To the adventurer. The night owl. The lost.
